Hi! How are you all doing? I hope you are all well. Since we have been eliminating oil from our diet, salad dressings can sometimes be a challenge. We usually just put balsamic and red wine vinegar on our salad. Sometimes I make ranch or a balsamic dressing.
We were having salad the other day and I wanted something more than just vinegar on our salad. I was looking for an oil-free quick dressing. I came across this 3-2-1 salad dressing from Jane Esselstyn.
3-2-1 Salad Dressing
3 tablespoons balsamic vinegar
2 tablespoons dijon mustard
1 tablespoon maple syrup or other natural sweetener
Just mix and serve. Does not make very much but enough for two salads. I added garlic and onion powder to it. It was very tasty and super quick to make. You can also add other herbs and spices of your choice.
The ingredients for this dressing I almost always have them around.
