Hi! How are you all doing? I hope you are all doing well. With the weather warming up I thought I would start sharing salad recipes.
This potato salad I was making for a long time, but somehow, I forgot about it until recently. It is made without mayo.
Red Onion Potato Salad:
6 cups sliced cooked potatoes 1 cup sliced celery
1 cup sliced red onions 1/3 cup fresh parsley
1/4 cup Italian salad dressing 3 tablespoons wine vinegar
Salt & Pepper to taste
Mix salad dressing and wine vinegar with the rest of the ingredients. Chill before serving.
You can make your own Italian salad dressing and make it oil free. I didn’t have any red onions, so I used sweet onions.
