Hi! How are you all doing? I hope you are all doing well. Did you try the granola? I like that it’s not too sweet. It would also taste great on nice cream.
Do you like breakfast burritos? I would like to make them more often, but I have trouble finding a healthy flour burrito.
I had some healthy pita breads in the freezer, so I thought why not use them. They worked great for an alternative to flour tortillas.
For the tofu scramble that I put in it, I use the following mix:

I also add some diced veggies - mushrooms, bell peppers, green onions, and spinach.
I cook up a batch of potatoes and add it to the tofu scramble.
Since I didn’t have any sausage, I made sausage crumbles:

I added some of that to the tofu scramble.
It tasted pretty good.
