Hi! How are you all doing? I hope you are all doing well. Recently I made a minestrone soup in which I added dehydrated veggies.

When I made this recipe, I didn’t use oil, I changed up some of the veggies, and I didn’t have any cannellini beans. I did have dehydrated white beans and assorted dehydrated veggies. I bought these from Harmony House.
I used 3/4 cup dehydrated northern beans and rehydrated them with a cup of boiling water. I also added the following dehydrated veggies: 2 teaspoons bell pepper, 2 teaspoons onions, 2 teaspoons veggie soup (which I bought from Harmony House), 1/4 cup green beans, and 1/4 cup green peas. Since the soup was going to be cooking for a while, I threw the dehydrated veggies directly into the pot.
The soup tasted great with the addition of the dehydrated veggies.
It’s great to have the dehydrated veggies and beans on hand, especially if I need it for a recipe and don’t have the regular ones on hand.

Recently I was watching a video and the person had made a large pot of veggie soup minimally seasoned. She did it for batch cooking and used it for different meals throughout the week. She had soup one day, another day she scooped some of the veggies from the soup to make a stir fry, and another day she made a veggie curry with the leftover soup using coconut milk. That’s a great way to use the soup in a variety of ways.
