Hi! How are you all doing? I hope you are all well. I wrote about this email last July and I thought I would write about it again. Since I wrote this email I haven’t heard anything about eating properly, cutting out animal products and dairy and eating more fruits and vegetables, whole grains, and legumes, to help lessen the severity of COVID. All they seem to push is vaccines and mask wearing.
A plant-based diet can help prevent severe cases of COVID-19 and may reduce the risk of becoming infected altogether. Dr. Neal Barnard explored research that analyzed the diets of health care workers in 6 countries. The findings show that eating less meat and dairy and more fruits and veggies can reduce the risk of severe infection by as much as 73%. However a low carb keto diet appears to significantly increase the likelihood of becoming severely ill.
Researchers at Harvard Medical School and King’s College London, collated data from 600,000 individuals. The respondents filled in a detailed questionnaire about what they ate before and during the pandemic. The best rated diet contained fewer processed foods and refined carbs. The low quality diet was consistent with a stronger risk of developing COVID-19.
Dr. T. Colin Campbell(The China Study) has a great article concerning WFPB(whole food plant-based) and COVID-19. Dr. Campbell stated that people can defend themselves against the worst effects of the COVID-19 infection and help flatten the curve of hospitalizations by strengthening their immune systems through their food choices.

What ways can you add more fruits, veggies, grains, and legumes to your diet? Think about what you are making - avocado toast (you can add all kind of veggies to it), chili or pasta sauce (chop spinach, grated carrot or zucchini can be added), or fruit to a green salad (papaya, strawberries, blueberries, orange segments). Try to be intentional when making a meal and adding more greens, etc. to it.
