I’ve shared this sweet potato curry before, but it’s been a while, so I thought I would share it again.

This can be made on the stove top or in the instant pot.
When I make this, I like to use half sweet potatoes and half Yukon gold or some other potatoes.
You can serve it over rice or make some naan to have with it.
