Hi! How are you all doing? I hope you are all well. With the warm weather upon us, I like to make salads that can be a meal in itself. I also like to find ones that make a big batch so you can share it with others at a BBQ.
In one of the Forks Over Knives magazine I came across Szechuan slaw. Besides vegetables it contains rice, millet, and navy beans. It is very tasty.

You can also change this up a bit and add corn, and black beans, maybe some bell peppers.
I will be making it this week and sharing with my non plant-based neighbors. Most of them do like salads and I think they will enjoy this.
