I have been making these pancakes since we changed our diet to plant based.

I did tweak the recipe a bit - I did not add any sweetener, I used 1/2 cups sparkling water, 1 tablespoon ground flax (I added it directly to the dry ingredients), 1/2 cup chopped walnuts, 1 teaspoon vanilla, 1 teaspoon cinnamon, and 1 1/4 cups of frozen blueberries. The blueberries were added frozen.
I almost always have frozen bananas in the freezer, so when I know I am going to make the pancakes, I take them out to thaw.
These pancakes also freeze well. Place pancakes on a parchment lined cookie sheet and freeze. When frozen, place in Ziploc bag with wax or parchment paper separating each one.
