Hi! How are you all doing? I hope you are all doing well. Have you tried any recipes using dehydrated veggies? What do you think?
I think I mentioned before that when I can, I like to buy the organic pizza kit from Costco. It comes with four stone baked pizza crusts and four sauces. I usually will get two kits and freeze one. I just put the pizza in the freezer and did not separate the crusts. I’ll take it out from the freezer in the morning and am able to use them for dinner.
Since I had one crust that I needed to use up, I decided to make a hummus pizza.
Before assembling bake your crust, you can also use pita bread, or tortillas.
Ingredients:
Hummus - homemade or store bought
Kalamata olives
Red onions
Artichoke hearts
Sliced cucumbers
Tofu “feta”
Red bell pepper
Chopped greens/spinach
Spread the hummus on the crust and then add your veggies. You can use different veggies if you want. Enjoy!!
After the crust was baked, I cut it into six pieces to make it easier to make and serve.
