Hi! How are you all doing? I hope you are all doing well. In the last email I shared about the negatives of eating dairy. Do any of you still have difficulty eliminating dairy?
Over the past few years, I have found numerous recipes for making plant-based cheese, that is also oil free. Many recipes do contain oil, and since I am trying to eliminate oil, I search for the ones that are oil free.
Two emails that I wrote about two years ago have recipes for plant-based cheese.

I came across a vegan fondue recipe that looks pretty good and is oil free. I am hoping to try it in the next few weeks.

There are many options out there when going dairy free. It’s very important to read the labels. Look for ones that have the fewest ingredients and very little or no sugar and oil. Many of the cheeses that you can purchase at the store contain oil, and sometimes even sugar.
I did find some companies online that produce cheese that does not contain oil or sugar. You still need to check the ingredients, because some companies that may have mostly oil-free cheese does have some that contain oil.
Here are some of the ones I found that have cheese made without oil:
Siete, Treeline, Kitehill, and Miyokos.
Making “cheese” at home is not that difficult. There may be some additional ingredients that you need to have, but once you have them you can make a variety of cheeses. Additional things I bought to make “cheese” was agar powder, probiotic capsules, and cheesecloth. I usually have cashews, plant milk (unsweetened and sugar free), canned coconut milk, and tofu.
When searching for “cheese” recipes, look for oil free. You would be surprised how many recipes out there that you can find that are oil free, and not that difficult to make. You can find recipes for ricotta, mozzarella, cream cheese, goat cheese, cheese that you can slice, cheese sauces, and parmesan cheese. All of these can be made plant-based.
Dr. Neal Barnard has some more info on the negatives of cheese, as well as some YouTube videos.
