Awhile back I shared some plant-based chili recipes. I came across another one that uses jackfruit. It takes a little time getting it ready, but it cooks in the instant pot in under a half hour. It has a great spiciness and is good for a crowd.

Try this recipe and let me know what you think. Jackfruit takes on the flavor of the food you are cooking and kind of reminds me of shredded chicken but a lot better for you.
