Hi! How are you all doing? I hope you are all doing well. Have you tried making the soy curl bacon? What do you think? My husband asked me to make the soy curl bacon blt’s for Superbowl Sunday.
Recently my husband and I were on an 11-day trip, and I needed to plan for most of the food. I have several breakfast bar/cookie recipes, but I found this one that’s great. It only has 4 ingredients if you count the salt.

I added chocolate chips, but you can easily add raisins, nuts, or dried fruit to it. It tastes great for breakfast and would be great in the afternoon for a snack. I like that it only has a few ingredients, and it also freezes well.
This month is my husband and mine 6-year anniversary going plant-based. We don’t regret it at all.
When we travel, I like to find plant-based restaurants or places that have some plant-based food. If you are ever in Las Vegas, they have many restaurants that are strictly vegan/plant-based. Last year when we were there, I found a plant-based Italian restaurant that had my favorite food - eggplant parmesan. This year we found a restaurant in Las Vegas that was all vegan dim sum. It was great having so many options to choose from.
