Hi! How are you all doing? I hope you are all well. Have you ever made a big batch of plant-based taco “meat”? What to do with the leftovers?
Tacos are always great as leftovers. Sometimes I like to recreate a new dish from the leftover taco “meat”. This past week I made a big batch of taco “meat” and made two new dishes with the leftovers. The first meal was a taco casserole - I made enchilada sauce, put some on the bottom of dish and placed 3 corn tortillas on top of it. I then placed the leftover cilantro rice, then “taco meat”, homemade cheddar “cheese”, roasted sweet potato with black beans, more enchilada sauce and repeated another layer starting with the corn tortillas. I baked it in a 350 oven for 45 minutes. It was quite tasty.
Another recipe I like to make with leftover “taco meat” is a taco salad. To make taco salad add rice, beans, corn, avocado, tomato, onions to a bowl of mixed salad greens. I usually use what I have leftover from the tacos. Break up tortilla chips and add to salad for crunch(save the crumbs from tortilla chips and add to salad). For dressing - mix vegan ranch with hot sauce or salsa and put on salad.
There are two other recipes that I came across that uses “taco meat”. I haven’t tried them yet but they look pretty good.

In the above recipe I usually use the frozen riced cauliflower from Costco after it is defrosted.
When making the “taco meat” I usually combine both recipes to make one big batch.
