Hi! How are you all doing? I hope you are all well. Happy 100th email!! This is the 100th email since I began writing it. I hope it has been helpful and informative for you as well as sharing some delicious recipes to try.
If you look on the internet there are literally 100’s of sandwich ideas to try. Some are time consuming and some are pretty quick to make. In this email I want to share some recipes for hummus, tofu “egg” salad, and “no-tuna” salad for some delicious sandwiches you can make.
Tofu “Egg” Salad

When making this recipe try to get the black salt(Kala Namak). It has an eggy flavor.
“No-Tuna” Salad Sandwich

I have made this recipe for a women’s tea and people who really don’t like tuna really enjoyed this recipe. It’s great on crackers.

Hummus
You can buy hummus at the grocery store, but many of the brands contain oil. It’s really easy to make so give it a try sometime.

Here is another recipe for hummus that I got from the carton of garbanzo beans:
2 garlic cloves, 1 1/2 cups cooked garbanzo beans rinsed and drained, 2 tablespoons tahini, 1/4 cup water, 3 tablespoons lemon juice, 1/2 teaspoon tamari, 1/2 teaspoon cumin, 1/4 teaspoon coriander, and cayenne pepper to taste. Put all in food processor and blend well. Chill about an hour before serving.
You can also add roasted red pepper to the hummus for a different flavor.
When making your sandwiches:
Try to use oil free mayo and other condiments as well
Choose the right bread, wrap, or roll
Use large lettuce leaves or collard greens leaf instead of bread
Buy an oil free “plant-based” cheese or make your own
Add veggies to your sandwich - greens, tomatoes, onions, cuke, bell pepper, sprouts, etc.
